With superior numbers they can be really really effective so long as you don't engage over top of a pack of marines obviously. They do 5 (x2) at 1.11, and vikings have zero armor which means that 7 phoenix will 2-shot vikings. *shrugs* hope I answered your question, though I'm not sure how much there is to be discussed here.

As you aptly put, there is no point trying to micro Phoenix vs Vikings as it actually will more likely work against you since some Phoenix will probably not get shots off and the Vikings WILL get all their shots off. So if you've decided to engage the Vikings, I would probably just A-move into them for the reason that IF the Viking player chooses to micro and focus fire your Phoenixes, A) This is actually likely to hurt his overall DPS during a battle as Vikings have a horrible tendancy to overkill and B) if you see the fight is going badly, you can simply retreat whereas he cannot... Meaning your efforts are more likely to be better spent back at home with macro instead of trying to be ultra super duper amazingly efficient in the Viking vs Phoenix battle. Don't let the range of the Vikings scare you too much... Yes they will get the first shot on you, but Phoenix shoot a lot faster than vikings which will make up for that time you spent running up to them. Think of it like 2 unmicroed marines vs 1 chargelot... The marines will fire first yes, but that one chargelot is going to smash their face in if they don't run back, and in the case of Vikings, they cannot stutter step like they do against Battlecruisers.

Its always less effective to engage equal sized forces, depending on numbers and if vikings overkill or not, but even if a viking gets the first shot off, a phoenix will beat a viking 1 on 1. Since air units don't really take up space, this scales indefinitely with numbers (but how you focus fire is pretty important) The advantage that protoss has (other than phoenix being (kinda, but not super-) cost-effective) is that the faster speed allows you to choose whether and where to engage so that you are more likely to engage on your terms, and its easier to create situations where you can take advantage of smaller numbers of vikings being isolated on the map.

There's a difference between a single phoenix taking a viking shot and 10 phoenixes taking a volley from a viking clump. That difference is that the 1v1 exchange doesn't cost you dps, only hp, but if you lose a whole phoenix to a volley before you're in range, that does cost you dps. That's why range advantages still scale with numbers in favour of the unit with longer range, even with air stacking.
