In response to those looking for some decent recipes for the Vegi I figured I'm the man when it comes to that.Ive not eaten meat in 16 years now, neither has my wife. Both of my children are also non-meat eaters.I've decided to throw this one out and if its liked ill continue with more. With that said lets get to the food.

Penne with Fennel.Tomato and Blue cheese

Recipe serves 2 easily doubled for 4.

Ingredients:
1 fennel bulb
8 oz penne(or other dried pasta about 2 cups)
2 Tbl Olive oil
1 shallot
11/4 cup passata or tomato sauce
pinch of sugar
1 tsp chopped fresh oregano
salt and pepper to taste

1
Cut the fennel bulb in half.cut the core and root away.Slice thinly and cut into strips.
2
Bring large pot of salted water to boil.Add the pasta cook for 10-12 minutes more or less depending on personal taste.
3
While pasta is cooking. Heat the oil in a small saucepan add fennel and shallot cook for 2-3 minutes over high heat stirring occasionally.
4
Add passata(tomato sauce),sugar, and oregano.Cover the pan and simmer gently for 10-12 minutes until fennel is tender.Season with salt and pepper.Drain pasta and return to pan.Toss with sauce.Serve with blue cheese crumbled over the top.

Its fairly simple quick home made meal.If you dont care for fennel can always sub some other stuff you may like more.though the flavor play between the fennel and blue cheese is very nice.

Hope you guys like it Ill probably post my favorite cheese cake recipe some time later tonight ...maybe its literally my favorite cheese cake recipe ever.

Edit: if anyone is intrested in vegan cooking I have tons of recipes for that as well.

This doesn't conform to my glucose only diet.

More seriously I just ate a pound of ground beef XD

Still that looks like it could be very tasty, even without meat :3

thanks for the recipe

plus ground beef is disgusting. I gave up eating red-meat long time ago but I still consume the occasional chicken/fish

Pesto = Pine nuts [ expensive ] olive oil and basil leaves. That's the simplest and classical way to make it, oh yeah add salt and freshly ground pepper.

Just blend it all together.

agreed.
I've never thought people who are vegan to be stupid or anything, but I have never understood how they can learn to fight the craving of meat.

Some days I'll just NEED some chicken or beef or something hearty, filling, and protein rich.

Eating green leafys and other natural protein stuff is not gonna cut it for me. (and I've tried before).
And protien supplements are not gonna cut it either ( i used to take whey protien every other day when I worked out regularly and still required meat).

Is it like kicking smoking or something?

PS- Eating vegan is expensive as hell too and a chore. You can never just grab some fast food in a pinch. Probably the main reason why there aren't as many vegetarians even after watching such documentaries as super size me and that other movie about the mexicans in the slaughter plant in el paso.
..and then I would, ya know, check em'. (Aka SpoR)

I wouldn't be able to become a vegan. I don't really understand why someone would choose to not eat meat. I suppose it's just a personal choice, like religion. Oh well, more meat for me.

Don't quit eating meat cold turkey one day. Instead experiment with eating meet only half the days first (or just one day a week). That gives you time to get used to vegetarian cooking and learn about alternatives, great recipes etc.

If you've done that for a month or so, THEN you can go totally vegetarian. Your body will have gotten used to things like beans in the meantime. It will know how to respond to not getting meat daily.

Eat a dark green vegetable (broccoli, spinach, kale, collard greens) at least three times a week.

take a vitamin supplement that contains B12 or include nutritional yeast in your diet regularly, especially if you're vegan or mostly vegan.

Water water water!

Make it a goal to eat at least one piece of raw fruit or a handful of raw vegetables every day

Reduce your refined sugar intake.

Fruits and vegetables all contain different nutrients. A simple way to remember to eat a range of vitamins and minerals is to vary the colors of the vegetables you eat.

stuff stolen from a few sites.hope these may help you.

Vegetarian: Anyone who doesn't eat meat. Vegetarians don't eat fish either. Many vegetarians in the West do consume dairy products and eggs.

Vegan: people who don't eat meat, or consume animal products (like milk, cheese, eggs). Vegans will often try to avoid using animal products like leather as well.

Indian vegetarian: vegetarian but avoiding eggs as well as meat and fish products. The idea is that eggs might be fertilized and that means they might be alive

got any recipes that are newb friendly? i just decided to try giving up meat last friday. a lot of people i've been meeting, and hangout with are vegan, vegi, or cant eat wheat products. plus i hardly ate meat anyways, maybe once every week, or once every 10 days or so. so i figured why not cut it out all together and do this vegetarian thing a whirl. i'm going to the store tomorrow, and ideas would be awesome.

a few days later after i gave up meat, there was a thread on LP about a documentary about animal rights. it reaffirmed my feelings about the issue

As far as the eating vegi is expensive well Id rather eat more costly food thats better for me than foods filled with fatty oils, chemicals etc.But it all depend son how you shop. Its alot cheaper for me to buy fresh food and cook at home than picking up say a frozen Amys(organic, vegi company that sells pre-made foods) pizza.

But that applies also to meat its going to be cheaper for you to make yourself than buy pre made crap.Ill try to shoot out a couple more recipes for you Matt.Anything in particular, maybe certain ingredients?
Im gonna go iccup in a bit ill check after a few games.

):

Near the end of every month before I get my next set of living expenses from my parents (still a college student) I always end up going for at least a few days eating nothing but canned pasta, cup ramen and plain steamed rice...

I always feel empty and borderline insane when that happens.

I don't think I could go without meat for a matter of days...I can't believe you've done it for 16 YEARS!!

Thank you fuddx... I'm planning on trying out going vegetarian for a month very soon (in March); the nutritional tips are particularly helpful. Any other advice?

Thanks for the recipe, FuDDx.

There's also super-vegans who won't eat anything cooked. Their food usually tastes like crap.
