Honors Nanotechnology Engineering (Co-op), but more like Advanced Materials Engineering. I entered into the program because I wanted to go into some sort of Engineering/Applied Science program. My parents didn't pressure me into any program; it was all my choice.
Even though I'm in a co-op program, I'm not as hot as those Electrical Engineers, and the economy isn't helping. I have no idea how my future will turn out in terms of job opportunities =/.

i majored in chemical engineering, i had minors in chemistry and biochemical engineering, and minors in math and chinese that i never finished
i'm a grad student in chemical engineering, so i'm using my degree =p

In college my major was social sciences, now I'm majoring in psychology and most likely to add a double major in cultural anthropology

Anyhow, at least when I read physics in HS we had a lot of stuff on the general theory of relativity, electromagnetic waves, thermo etc, which is not mechanics at all, the only part we did not go into is quantum and that is understandable since it requires a ton of math not available to HS students.
Come to think of it, we even did thermo, electromagnetic waves and relativity theory in elementary with a bit of nuclear physics thrown into the mix. Of course we did not go into them super deep but we did experiments on interference patterns, showed how a refrigerator works, electron orbitals and how they emit/absorb EM-waves when they jump and a basic why/how nuclear fission/fusion works. Hmm, now that I think back at what we did in elementary it was most of HS physics and even some of the first year in UNI, there was one thing I remember that I learned in elementary that I did not hear about again until second year in UNI.
And about that, I went in a special class in elementary :p
And oh, I'm into physics/math since they are so easy if you understand them and therefore I did not care enough to pick something else.

I did applied math for my undergrad.
After I finished college, I got a job as a buyer in the outsourcing department of a company. I used as much math as a junior high school kid would use - decimals, percents, and a billion excel sheets.
After debating whether to shoot myself or quit the job, I decided the latter. Now I am working on my masters of math education. I think teaching math is at least somewhat meaningful, and at least I have a job after I graduate.

I want to do chemical engineering and economics, but I'm afraid that these choices might change later on... I'm mostly concerned about picking something that I would like to do in order to maintain my happiness and sanity. What do you guys think about these subjects?

It depends on how smart you are, chemical engineering can be really hard if you are not ready for it. They study statistical mechanics which is basically using quantum mechanics to construct all of thermodynamics from scratch, if you have a good sense of logic it is awesome to see how it all fits together but if you are an average Joe it is horrible.
Social sciences are never hard so do whatever with it :p
