Hi TL!
I just realized this is my 49th (I think?) recipe on TL. Dang. I've really made this many blogs?!

I really appreciate all the love and support I get from everyone here. <3 <3 When I first started posting these little food blogs, I didn't think people would like them or that people would actually take the time to comment on my blogs. To my surprise, it seemed like people really enjoyed my blogs!

And because of that, I became more motivated cook. I read the comments on my blogs and learned new strategies to help improve my photography and my cooking processes.

I started to document my processes better and do more research on different cooking methods (a sous vide recipe is in the works!).

I started noticing more cooking blogs spring up in the blog section, so I started reading those too. Who knew TL had so many great chefs? It's pretty damn inspiring!

So thanks TL -- thanks for being an awesome and supportive community!

Enough mushy talk, let's get to the recipe!

I really enjoy the Borderlands series, which is why I've created something that resembles an item (specifically, a psycho class mod).

INGREDIENTS
  • salt
  • pepper
  • 2 teaspoons of olive oil
  • 1 tablespoon of worcestershire sauce
  • 3/4 cup of couscous
  • 3/4 lb of kale
  • 1 heirloom tomato
  • 1 1/2 lbs of ground bison


PROCEDURE

Prep work will take about 10 minutes. Total cook time is roughly about 25 minutes. This makes 4 servings.

Calories per serving: ~480 calories

  1. Set two separate pots to boil — one for couscous and one for kale. For the couscous, you should have roughly 2 cups of water.
  2. Add in your couscous to one pot of water. Season with salt and oil. Allow couscous to boil, continually stirring. Let cook for about 10 minutes. During this time, prepare your patties.
  3. When the couscous is finished, fluff it with a fork.
  4. While your couscous is cooking, add your kale into the other pot of water. Season with salt.
  5. Allow kale to cook for about 6 minutes.

  6. Combine your worcestershire sauce and your ground bison. Mix until thoroughly combined.
  7. Separate the ground bison into four sections. Take each of the sections, roll them into a ball, and flatten them each into patties. Press the patties firmly.
  8. Set a skillet on high heat and add in half of your olive oil.
  9. Season the patties with salt and pepper.
  10. Sear each side of the patty, and then reduce the heat to medium. Cook each side for about 5 minutes or until desired doneness.

  11. Begin to shape your Psycho Class Mod: place kale on a plate. Arrange the kale in a circle.
  12. Place few scoops of couscous over the kale. Mold the couscous into a circle and make sure that
  13. the couscous circle is smaller than the kale circle.
  14. Using a fork or a spoon, slowly mold the couscous into the shape of a saw blade.
  15. Place a bison patty on top of the couscous saw blade.
  16. Cut a slice of heirloom tomato and slowly carve a Vault symbol into the slice.
  17. Place the vault symbol slide on the bison patty.
  18. Eat!

Ugh, you lost me at the kale. Replace that nasty weed with spinach (or most any other green vegetable) instead.

Wow, confused that tomato for a pineapple.

Would pineapple work well here? It goes surprisingly well with patties and the like.

Nom.

I love couscous, but I find it mostly good for soaking up sauce (like rice). Is there a sauce or a dressing you'd recommend with this dish, or does the bison burger ooze enough to inundate the couscous and keep it from being boring? Or do you just really like the taste of plain couscous ?

I'm thinking maybe a balsamic vinaigrette...mmmm....god dammit I'm really hungry.

Hahhaha T__T I actually do enjoy the taste of fairly plain couscous. Just a bit of salt and olive oil does the trick for me.

The bison burger is pretty juicy, so some will leak into the couscous. Balsamic will work too. It'll taste pretty great on the tomato and the kale. :3


You can try making a super easy bbq-ish sauce using:

  • salt & pepper
  • ketchup
  • vinegar
  • garlic powder (if you've got fresh minced garlic, that's even better)
  • Worcestershire sauce


Alternatively, if you have chili paste, you can throw that in the BBQ sauce too. :D

i've always wanted to try bison meat o:

beef would be an OK substitute or no?

It's like beef but "cleaner" in a way, it's usually leaner anyway and to my taste it has a slight hint of bloodiness more than beef has and less rounded of a profile. (If that makes any sense.) It's really good! It loves a good red wine.

Beef would be fine with kale and couscous. I'd recommend a leaner mix OR a nice cut you'd use as a steak -- but ground for these purposes -- OR a junky cut you'd use for stew but ground... this way you avoid the hamburger taste of chuck / typical ground beef. Which would be fine, but I think this dish would rather be distinct. Also, you could mix 50/50 with lamb to good effect, or if you are into it even goat with some more mediterranean seasoning. But really you can't really go wrong with any properly cooked meat + couscous + greens.

Yummy, looks awesome. Defiantly my kind of meal! What does Bison taste like? I've never had it before, is it a strong tasting meat? Or is it pretty much the same sort of taste as your regular beef ? xD

Looks really nice and healthy! I heard of worcestershire sauce on a video thinking it was oyster sauce for the longest time and I kept wondering why my food tasted so weird. lool
