People prefer whatever is the best deal on the market. Go to the previous generation and the GTX 460 was considered the sweet spot. In the current market, a 6870 for $150 is a pretty damn good deal. Depends what you can find though, for how much. The 6850 is about on par with the GTX 460 1GB performance wise if not slightly better, and the 6850 after rebate is usually around $130, with the GTX 460 1GB usually around $140.
It really just depends on what's your budget and what offers the best performance.

After Skyr's recommendations I went with the H67 mobo and my friend really recommended the i5 2400 for gaming. My friend recommended hitachi for hard drives and cooler master for cases, and I went with the HAF 912 case because it had more fans/better airflow and was easier to access than the RC-310, although if you guys recommend I just go with the RC-310 that's fine. Is the Asus P8P67 PRO Rev 3.0 mobo much different then 3.1? The store I was going to buy from doesn't have any rev 3.1 and I don't want to order from online if I don't need too.

I think the Astek on the 3.1 is slightly faster? There isn't anything wrong with the NEC on the 3.0. I have a 3.0 one myself.

Yeah I realized that shortly after, I just don't think I realized to the extent it is (4x the price for the same amount of RAM). I guess it's necessary if you want your system to have some retarded amount like 32GB. Niche market.

I can't think of too many circumstances where 32g of RAM would be the entrypoint to a task that you would be running only one CPU anyway.

Hmm my friend does video editing / modeling as his job and he has an overclocked 2600k and 32gb of memory and when he makes complicated animations that have like skyscrapers shattering into something like 100.000 glass pieces that all reflect the surroundings, he says that it uses up all of the RAM.
