Traditionally, Apple uses Toshiba SSDs, Samsung too these days. I suppose that means they're okay. See here: http://www.anandtech.com/show/4275/apple-now-using-samsung-ssds-in-macbook-air If something's really cheap, maybe it's really old or doesn't even support TRIM or something like that. (On a side note, Macs were late with TRIM support.) I'm not sure much about them though. Also, they can be a bitch to install sometimes. Look at case modding forums and see which ones are popular.

Wires can't handle it, otherwise, a decent one probably has the actual output amperage. Hmm, nevermind, car batteries seem to dump more amps than I thought, for cold crank.

How much power your configuration needs depends on the parts... but if the 430w power supply you have is a good model such as the Antec Earthwatts 430D than it will be adequate for a Sandybridge + ~$200 card.

Are there any new graphics cards coming out soon? I heard someone say Q42011 but I can't find much info on it online (ATI 7000 series?) If current prices stand, should I get a GTX 570, 580 or maybe 2 ATI 6950 in CF? What would be enough to run smoothly on that screen? The budget isnt that big, I basically have somewhere around 300~400$ for the graphics card alone.

But if you're considering pure raw power, and ignoring all the other factors that come with multi-GPU, out of the three options you listed, CFX6950 will basically destroy the other two options. Really doubt you need that much though. Assuming this is correct, and a worst case scenario, unless you really like placebo effect, a single 570 or 6970 should do you fine.
