Portugal is safe, you can't expand much, but Castile will be your bodyguard for the whole game and you can colonize anywhere you want, or start a huge trading empire.
Castile is the same. Probably not for your first playthrough but for your second. You have to keep France happy so they don't shrek you, you can go toe to toe with some of the African/Italian states, and once you form Spain you're unstoppable (except for France).
Muscovy is great because you're already pretty big, you have a lot of room to expand (into Novgorod, Golden Horde, etc.) and once you colonize Siberia you'll have infinity billion manpower.
England is like Portugal except you have some countries to conquer (Irish provinces, Scotland), and your navy is amazing.
And Sweden is OP because the developers live there. There's a province which produces like 500% copper and it ensures you never go broke.

Although I've never manage to get an "easy" playthrough with England, everyone always hates me for some reason and everything goes shit
