TL;DR: America enforces dumb Hepburn system. There are tons of romanization systems however. There is no 'correct,' there is only 'Hepburn is poop and stop bastardizing my name.'

Even in Nihon-shiki and Kunrei-shiki (from your link) I'm not seeing a shift to an "ou" from the ō. But, a Japanese friend of mine tells me that it doesn't matter, any romanization system is wrong. (Then again, she lives in Okinawa. And complains that the romanization of her family name is always wrong when she's dealing with English speaking institutions. And as Americans prove, being a native speaker doesn't always confer academic understanding of one's own primary language.) Not unlike my Greek friend, that will curse you if you refer to it as Istanbul.
This is why it's best to use 創真.
But either way, it was a good episode. And that's the important thing.
It's not best to use the kanji when you're trying to romanize things... Like what?
And JSL is what utilizes the double vowels. As I see it, completely removing a character just to make things easier for whities is a dumb way to go about things. It makes it harder for people to distinguish certain readings (oo from ou; how does someone know if it's supposed to be 'Souma' or 'Sooma' without looking at the kanji (let alone actually knowing the kanji)?). It also sucks when you're trying to learn how to type the language and people don't know how to actually spell out the character properly (why in the world would you use "o" instead of "wo"? JSL does this too which is dumb; Nihon-shiki got it right there).
None of the systems are completely consistent which sucks. I use what I call the SoUma Romanization System and don't chop off letters just for the heck of it. The furigana of 創真 is そうま. Which means it's Souma. ze endo.

Oh another rehash of the ou vs inferior romanization systems and I missed out on it
Free the u, burn down everything that uses Hepburn. But then again I see emnjay on irc writing "NANE?" and just doubt it makes a difference at all. But hepburn is indeed stupid. Why would anyone even bother with trying to find that stupid accent on their keyboard...

Or Soma for this matter since no accent in the title (at least HS versions iirc) so it could be all three of Souma/Sooma/Soma
That elf has some unspoken of mental trauma doesn't she.
Not that I've seen the episode yet, still waiting for Emnjay but, + Show Spoiler +
When she was rescued you could see her being pushed down into that well by her father. She keeps on saying "Dad" inbetween and there was that scene when they first arrived at the refugee camp when chibi-soldier asked Itami why the Elf keeps asking for 2 sets of clothing. Itami answered with "Maybe she has an imaginary boyfriend?" because he doesn't know about the flashback and her saying "Dad" is supposed to be inaudible for everyone else.

So yeah.
The end of this episode makes it more clear I think.
