K, why does Saber call him Archer then?

Gil was the Archer class from the previous war and was able to sustain himself in the world after the last war ended. So he was in Fate/Zero.

Because he was the archer of the fourth grail war.
Also he left the fight because as he said, getting soot on his clothes matters more to him than killing them then and there(Fuck yeah, lancer pissing off Gil from beyond the grave). It fits his character 100% perfectly, he doesn't consider it a possibility that he could lose to them so wether he beats them then and there or the next day doesn't really bother him.
He's gilgamesh afterall, he sees himself above all others. The king of heroes. Arrogance incarnate.

And Shirou's ability to improve was explained in the previous episode, he got gradually better with each blow they exchanged.
Not that it mattered as this was never a battle of who was stronger, archer could have killed him if he truly wanted, it was a battle of ideals from start to finish which was why archer just gave up, he lost and shirou won.

Fate/Zero is a prequel, so knowing the ending after watching F/SN isn't really that surprising

If i were you i'd wait with watching F/Z until you watch the upcoming Heaven's feel movie. If you're planning to watch it anyway.

And i mean, yeah, they basically said he was a servant in the last war and then saber refers to him as archer, so it was made fairly clear imoimo.

Yeah it kinda fits his character to leave them but it's still a plot-convenience. He still changed his mind pretty suddenly.

The explanation about Shirou's abilities is not really an explanation. It's like saying "he got better because.". It's also what Saber said this episode. I still don't know why he that happened.

There was literally an entire scene dedicated to showcasing him improving with his magic with each blow they exchanged in the previous episode.

Archer:

Everytime they exchange blows a bit of archer's experience flows into shirou as demonstrated quite clearly in those scenes with there being magic running from the impact of the swords back through his magic circuits and through his entire body.

deadpan sonoda umi / tougou is the best. Just seeing her bored expression was hilarious. Even confident when in front of Sir Zech and Azazel.
also, Juggernaut drive is pretty cool. Issei beat Shalba too easily. Looks like something you don't wanna fuck with.

Not sure if I'm understanding you, but I'd also recommend waiting until after you watch Heaven's Feel before you watch F/Z. F/Z is less about finding out what happens at the end, and more about how the end comes about, if that makes sense. It will also spoiler the crap out of Heaven's Feel for you.

Considering that their entire power revolves on copying things that they can analyze, it's really not much of a stretch to get better by fighting yourself.

It's been a long time since I've read the VN, but I kinda remember one part where Saber is training Shirou (because he's a huge shitter and a liability in fights. But I digress). Eventually, Shirou opts to adopt Archer's fighting style rather than Saber's because it feels "natural" to him. Which makes sense - what works for Archer should also work for Shirou, considering they're the same person.

The same logic is applied to Shirou's choice of weapon. Shirou can make a projection of any weapon he likes, but more often than not, the one he chooses to create is Kanshou and Bakuya. He never saw those swords before he met Archer, but he's still inexplicably drawn to them.

There is also a plot point in Heaven's Feel relating Shirou's and Archer's skills, but I won't spoil that.

projections really fuck up his body? You can even die in a bad end just from using like 3 projections in a row. How come Shirou in HF blows at them but in UBW hes just projecting all over the place ezpz.
