Does Fate/Zero get better after the first few episodes? It has potential but just seems pretty meh so far (4 episodes in).

Depends on what you didn't like about the first 4 episodes. The action doesn't really ramp up until episode 10 or so, but if you didn't like anything about the characters or the environment/story building so far, this series probably won't be your cup of tea.

The art, animation and music in Fate/Zero are all incredible. In my opinion it's worth watching just for those. There's some incredibly well animated scenes.
In my opinion it does get better after the first episodes. The second season was significantly better than the first one as well, in my opinion. The characters are pretty bleh, though Rider is boss. Episode 5 is really good in my opinion and has some incredible animation. At least should give that one a try.
The story and such are all right, but nothing special in my opinion. Then again I had nearly everything spoiled by having read the FSN visual novel so there's that. However, even if the characters or the setting aren't incredible, I'd still watch it just for the animation and the music. It's not like 26 episodes take that long to watch and I think you should at least get something out of it even if it won't become your favorite anime.

It is the human characters so far that are mesh IMO. The Servants seem pretty cool but the humans are very meh (plus most of them seem like assholes in one way or another). Also I just for some reason. HATE the voice for the master of assassin, like that voice just seems wrong for the body lol.

His voice becomes a lot more fitting the further you go.

Well it's hard to argue against that. Most of the human characters indeed are quite bleh. I still think you should enjoy it, especially if you find some of the servants or the setting interesting. After all, I believe I mostly shared your opinion at that point but still found the anime very enjoyable.

What I dislike about this as an anime vs VN like Fate Stay Night are the stats... I love reading about all the stats and ability descriptions and magic resistance levels and lores and such in the fate stay night status menu and when watching anime all that is gone...

I started watching Fate/Zero, now on 2nd season. For some reason I really liked the 1st ep. Having not done the vn, I think the anime by itself does a good job balancing such a large cast of characters. Animation/scenery/lighting is top notch

For someone who has never touched the Fate story before, it probably seems like a lot of long setup and mumbo-jumbo.

Episode 4 of zero was better because more servant action in it and like people have said the animation and art style is really good.
Edit: I'm behind in monogatari too, for some reason they are delaying putting up their episodes but every other anime this season they put them up asap. Why the hell is that?

Okay, so...Zero is a prequel, and intended as such, so a good deal of the stories setup and "background" is about building up towards a story you should already know.
That said, Fate/Stay Night was a completely garbage anime, and I cannot recommend for anyone...and given that, watching Zero as a standalone show is perfectly acceptable.
