The second scenario is based off something I read on the Bleach subreddit. It's in the chapter discussion (or chapter release thread) and he explained it a lot better than I did, and in a lot more depth, so go check that out if your still curious.

Unohana was getting owned by Zaraki before Zaraki started unconsciously holding back so assuming that Zaraki is no longer holding back at all, and adding in some growth on account of him being so much older hed easily be on the same level as the 0th division guys
