Recipe #1 - Beefy Saucy Pasta

Pan-Seared Pork Chops

Ingredients: (prices are approximate)
  • 2 center cut pork tenderloin chops, 1-1.5" thick [$2]
  • One small (3" diameter) cooking onion, diced [$0.25]
  • 1 cup apple cider [$0.25]
  • Extra virgin olive oil
  • Sea/Kosher salt
  • Course ground black pepper
  • Poultry seasoning

You should be able to find pork on sale pretty easily. If tenderloin chops aren't on sale, just use a different kind of chop. Now for the instructions:

Instructions:
  1. Pat the pork dry and season with salt, pepper, and poultry seasoning. Be liberal with the pepper, as it forms a nice dark crust after searing.
  2. Heat up a large frying pan on high heat. When it's hot, add enough olive oil to coat the pan.
  3. Place the pork chops in the pan and cook for about 3-4 minutes. If they start to stick, move them around a bit.
  4. Turn the chops and cook the other side for about 3 minutes.
  5. Remove the pork chops from the pan and cover with aluminum foil. They will continue to cook via residual heat.
  6. Add a little more oil to the pan, then add the diced onions. Stir them around a bit to let them caramelize, then add the apple cider.
  7. Scrape up all the brown bits from the pan, then put the chops back in. Let them cook for a bit longer in the sauce. Remove them when they're fully cooked (you can cut them open or use a meat thermometer). *Caution: pork should be mostly white, but a bit of pink the middle has been shown to be safe, as long as the juices run clear and the thermometer reads 160F".
  8. Serve the chops with a starch (rice, potatoes, etc) and vegetables (salad or steamed vegetables).

This is a delicious and quick way to cook pork. The caramelized pepper crust is strong and flavorful, and the inside is moist and juicy. Best of all, it takes less than 30 minutes to make.

Awesome!

I'm trying this out for sure next time I go for groceries.
I've been eating Pasta, rice, soup and Noodles for about 3 weeks now and I think my taste buds are planning a revolution.

Edit: If you're planning on doing more of these, maybe you should think of adding a link to your previous recipe?

Here's a recipe I did a few days ago:

Ingredients:

  • Salmon steaks (frozen, bought at campus grocery)
  • Cheap wine (like really cheap. 4$, bought at Trader Joe's with a friend's fake rofl)
  • Diced onions (onions at campus grocery)
  • Couscous! (Trader Joe's again)
  • Unsalted butter (campus grocery again)
  • Spices for taste. Also salt and sugar. (Mainly Trader Joe's)


For the sauce, brown onions on stove top. Simmer wine until reduced about half. Add onions, spices, salt, sugar, and butter (half a stick) into the wine reduction. Keep it simmering and don't forget to keep stirring!

Cook couscous like you'd normally cook it if you had the least clue how to cook.

Brown salmon steaks in a pan. Not much to it.

Assemble!

Emp you show off.

Well on topic, I usually pan-sear all my meats. It just tastes better and its a lot easier than compared to roasting or whatever (My oven is shitty too).

Edit: I never been to Trader Joes but I suppose its cheaper than WholeFoods. The WholeFoods here is in the Tribeca/Soho area, I pass by it everyday.

Doesn't heating olive oil on high heat have some particular reaction that produces something we shouldn't eat? Or have I mixed it up with another oil?

I did the sauce and broccoli, my friend did the salmon and couscous.

Basically the sauce involved me stirring a saucepan for over an hour waiting for shit to evaporate.

You probably won't need to cook much your first year, since most universities require that you're on a full meal plan.
