Luckily today, even the most unfit, farsighted, asthma ridden individual can ride the coattails of their ancestors and buy the pre-butchered meat of animals that would otherwise tear them to pieces in the wild. So this summer, take some time, honour those who sacrificed so that you could be lazy, and GRILL SOME FUCKING MEAT!
Preparing the ribs
Ribs come with a membrane on the back side. Some people argue that it locks the moisture in and should be left on, others argue that its tough and prevents flavour from penetrating the meat. I prefer to remove it myself, and it comes off pretty easy. Whatever path you pick, rinse your ribs and pat them dry.
The rub
- 1/2 cup of brown sugar
- 1/4 cup of paprika
- 1 Tbsp Black pepper
- 1 Tbsp Salt
- 1 Tbsp Chili powder
- 1 Tbsp Garlic Powder
- 1 Tbsp Onion Powder
- 1 Tsp Cayenne pepper
Rub em up, and leave them in the fridge overnight in plastic wrap.
You will have some leftover rub. Looks like you'll have to make more ribs later. Damn...
Into the oven
1. Slice a lemon and lay the rack down over the slices.
2. Pour a layer of water into the pan and cover it tightly with some aluminum foil.
2. Cook at 325F(160C) for an hour and 15 minutes.(If you have side ribs, cook for an hour and 45).
Onto the Grill
1. Preheat your grill on high, but turn it down to medium before you throw the ribs on.
2. Sauce up your ribs in your favourite BBQ sauce, preferably something sweet because the rub is relatively spicey.
3. Grill for about 20 minutes, flipping them every once in a while and applying more BBQ sauce as you go. Layers of delicious sauce will form.

Preparing the Sides
Jack Daniels honey bourbon beans
- 1 can of beans in tomato sauce
- 2 Tsp honey
- 2 Tsp molasses
- 1.5 Tbsp Jack Daniels
No secret here. Just heat them up.
Cornmeal Muffins
- 1 cup of cornmeal
- A little less than half a cup of flour (You can thank the US for these measurements)
- 2 Tsp of baking powder
- 1/8 Tsp of baking soda
- 1/2 Tsp of salt
- 1/8 cup of sugar
- 1 cup of buttermilk
- 1 egg
- 1/8 cup of vegetable oil
- Honey
- 1 small cobb of corn
1. Blanch the corn in boiling water for a few minutes, then remove the kernels.
2. Mix the dry ingredients in one bowl, mix the wet in another.
3. Mix them together.
4. Add the corn.
5. Pour the batter into a muffin tray that has been liberally sprayed with non-stick. Toss them into the oven at 450F(230C) for about 15 minutes. Around 10 minutes in, brush some honey on the top of the muffins.
6. Eat them with a generous amount of butter.
