Agreed. The catching aspect of Pokemon GO is basically the Safari Zone, especially when it comes to not being able to use Pokemon, but being able to use Razz Berries. Then add Poke Stops/ Marts and Gyms, and that's that.

I mean they could do it if they wanted to. Someone managed to code it back in 95, you could build the same thing now underneath. Of course it would be a lot more work and would have a bunch of bugs, but if they thought it was worthwhile they would make it happen.
It's not there because they've obviously made an intentional decision not to do it. They want Go to be experienced in real life more than on the screen, so they've made interactions quick and simple and avoided anything that would result in long periods of "playing" in the traditional sense.
In principle, I'm okay with that. The simplicity makes it possible to catch stuff while walking to work etc without having to stop and engage in furious battle every 100 m.
It has some big downsides as well, though. I really do not like the way gym battles work, for example.

Once you catch dupes are you guys just transferring them for the extra candies?

Absolutely, there's no reason to keep tons of crappy dupes around to clutter up your box.
Just keep your strongest (look at max CP as well as current CP) and grind the rest up for candy.
Situations you might want to keep a dupe: It's strong enough to consider fighting with/leaving in a gym It's a cheap evolver that you already have a bunch of candies for, and you want to evolve a stack of them for XP

Pretty much, once I had a stockpile of rattata candies I periodically evolve any additional rattata's for the player exp.
For pokemon that I would use for battling or defending gyms, I also evolve if possible (rarer to get so limited on those candies) for the different move sets.

Anyone hatch any eggs yet? I've found eggs that require 2, 5 and 10 in to hatch. Are they all different rarities or levels or is it completely random?

I haven't hatched enough eggs to have a large enough sample size (only 6 total), so I'm not sure about rarity or level yet.

Saving duplicates: I would level as you can but don't go overboard. I save up a ton of candies and weaker pokemon (the rattatas and pidgeys etc) and then pop a lucky egg and evolve them all in one go for that delicious bonus xp.
And about the battle system I meant the gym battles and eventually battles vs other people. I get that battling all the wild pokemon would be a nightmare and I think the way you catch them now is fine, but the gym battles are quite dull and the tap thing seems to create problems (shit lags out, goes from half life to dead, etc etc) where a turn-based system would surely have less of those issues, there would just be a lot more coding to be done for all the different moves.

Definitely don't go overboard. Especially on the more common pokemon, you can afford to just pick out ones with good movesets that are high level, and then just fill up gyms with high level common pokemon.
My top end pokemon is a 1k hypno with a magmar(10k egg) coming in at a close second.
You'll get a few incubators from leveling up, and I would use the reusable one on 2k eggs, and 3use on 5/10k eggs.

It seems like incense is a necessity.

It seems like incense is a necessity. Keep the game open and give it some time, you do t always see them near you. Incense is more of a nice thing to have then a necessity from what I've experienced.

The way I did it was to have my brother drive to places while I pulled double duty on 2 phones. Actually much harder than you'd think.
Be responsible about it. Not only do you have to have your phone out, you have to actively look at your phone. You can get more than just yourself killed doing it.
