Yes, and watch Kara no Kyoukai as well if you haven't. Tsukihime novel was good also but might want wait for the remake that's coming out soon(tm).

UBW is a must-read. HF can be subbed with the adaption whenever it is released, since the route is kind of grindy, and hopefully UFOTable fix that like they did with Kara. Reading it is preferable though. After that, Fate/Zero, LN or Anime

Kohsaka isn't focused on. Ever. So of course he's kinda boring in comparison. It's worth noting that he's pretty perceptive of the whole situation though.

Episodes 7 and 8 especially were absolutely fantastic for me and the one in the end that focused on homura was really amazing too.

Actually at this point I start to like how the series develops, with small number of characters that is made smaller by people dying every now and then, allowing each character to be explored and developed nicely. The ending for Sayaka was really sad, but understandable from how she has been thinking. Kyouko also seem quite random at first, but just as she get friendlier she dies T_T.
Homura's story is also revealed nicely, I was able to guess a bit with all the hints from previous eps but to that extent is such sad friendship story.
Madoka is still quite... lacking. She just be there and do nothing so far, baiting for some grand finale or some sort.
And fuck that cat, really. Worst cat ever
p/s: someone please enlighten me what is Deus ex ending that every one talking about? Is it some sort of archtype ending where someone just simply become god to solve unsolvable problems or it's a reference to how Deus Ex the game ends (I never play any of Deus Ex game so)

Not related to the game, just a general catch all term (deus ex machina) for when an author pulls a solution to a problem out of his ass via some convenient plot device or solution to a problem popping up out of no where.

Depending on how it is done, it can be intended to move the story forward when the writer has "painted himself into a corner" and sees no other way out.
You can make your own decision about it when you get there. There are certainly worse Magical Girl endings out there than Madoka's (I'm looking at you, Mai Hime), but I'd say Madoka's ending was certainly lacking.
