The only requirement is that they sing "normally" and not like Arch Enemy for example and no male co-singer that screams like death metal bands does, Epica and some other bands have some good songs but virtually all of the ones I've found are "tainted" by male co-singer dudes that sings with the "puke voice"
zeru made some good suggestions
I'm just going to post every female-vocal metalband i know without male growling, I'm so bad at putting things in one basket. Here's a few more (that kinda fit in) though not necessarily power/folk/death metal but perhaps you like em anyways

Edit: Multiple songs with saxophone. Hnnnnggg
Post it, I wanne hear!
Haha here it is. It's faint at points but it adds a lot and is really cool sounding. It is essentially black metal-like prog metal with saxophone thrown in with synth lines and tastefully used 8-string. There are a few other songs on the album that feature saxophone but these are my two favourites. It is a really neat concept as the saxophone is such a versatile instrument that doesn't enough use outside of stereotypical situations (jazz, ska, etc)
And since this is a symphonic metal thread I throw in this song from Ihsahn's first solo albums, it's probably one of, if not, my favourite song of all time. This guy is a musical genius.
Edit: Also to the person who posted Warmen, you are a hero, that band is awesome. You're connection of Warmen being like an instrumental Stratovarius is dead on.
Here's Warmen with Stratovarius' singer, Timmo Kotipelto. He's done a couple songs with Warmen.
Can't forget the synphonic black metal. Great artists such as Dimmu Borgir
Bal sagoth are a band that are just a mixture of everything epic. (sickest lyrics)
Was gonna mention bands like wintersun and stratovarus and other power/synphonic bands but looks like many of the good ones have been already mentioned.
If you like symphonic and power metal you will probably like this (Turisas!)
Hahahahaha Turisas. That band is so hilarious! They're the Manowar of modern viking/battle metal. So awesome.
On the topic of symphonic black metal, here's Emperor's old synth player, Charmand Grimlock's band. A good word to describe this guy's music is strange. Kinda neat though, but only in short bursts.
And here's one of my favourite symphonic black metal bands. They later turned into a crazy avant garde band. The vocals in this song are played backwards in comparison to the rest of the track. It has the Twin Peaks effect in full force.
And you can't mention symphonic black metal with Emperor <3<3<3<3<3

i love every band that was posted here POWER METAL FOR LIFE ! ! this style of music is what i pride my self on when i play guitar took for ever to get the skill up to play half that shit but it was a fun long road and has made me a better at the guitar over all. it also makes it so i can show off to my friends ^^
Also, Elvenking is my faviourite band of all time, although most people (even folk/power metal fans) haven't heard of them
This is easily one of my favourite songs ever, never ever skip an elvenking song
I think I only like Kamelot, Elvenking, etc. because of their vocals, there used to be a time when I was into the growling and other incoherent sounds, but these days I can't understand why a person would prefer listening to that than say, Snow, by Kamelot, which has great lyrics and an amazing singer.
