Hello all :D newb chef here again~ last few days I've been quite busy so haven't had the chance to make anything out of the ordinary >< but today I had some time so I wanted to try out a new dish + redo an old one!
Dish 1: Spaghetti alla Carbonara
I chose this dish first of all because it seemed quite nice and simple to make, and wasn't as heavy as my previous ones. The real difficulty was trying to make sure the egg didn't scramble while I was cooking, and of course trying to find authentic ingredients (I'm looking at you, pecorino-romano and panchetta -_-).
The only other thing was I overcooked the pasta just a little bit (on the edge of being al dente) so it came out less firm than I really wanted. But for such a delicious dish, it required only a fraction of the time to make than my previous ones (risotto, steak).

Dish 2: Steak au Poivre, side of garlic mashed potatoes
Version 3! Made for both me and my friend.. unfortunately, he is slightly lactose intolerant which meant I couldn't use cream for the sauce, leading it to be slightly runny (and tasting much more wine-y). This time I tried to add some garlic into the mashed potatoes and it turned out great! Not too overpowering but just a hint of garlic rounded out the dish. Also tried plating it differently^^

Looks good. I like how you're redoing dishes ... you'll really be a pro with them as you keep on cooking them. Was the garlic still crunchy in the mashed potatoes? How did you go about exactly to make it garlicky?

Made my own :D Boiled some baby potatoes, mashed them in the pot with a ladle (I don't have a masher :< ) while adding butter+cream

The garlic wasn't crunchy at all, it was more like a nice scent than actually eating garlic. I took one garlic clove and diced and grated it very finely, almost into a paste and added it in while mashing. In a hot pot still, mashing and whipping the potatoes created a nice hint of garlic while tasting rather than having bits of garlic to chew.

Nice, thanks for the garlic info. Do you prefer your mashed potatoes somewhat chunky or very smooth?
Also, any chance you can link us to the recipes you used?

im not a pro or anything but i think you have some real talent.
i cooked throughout university (more chinese style cooking since its faster) and i try to do some fancy stuff once in a while but it never looks as good as your does.

Optimally I like them fluffly :D but I have to make do with a ladle so there's always gonna be some chunks in there (which is ok for me).
Um...recipes I followed vaguely were:
Carbonara: + Show Spoiler +
Steak au Poivre: + Show Spoiler +
Mashed Potatoes: + Show Spoiler + (I added my own garlic in though)

thanks a lot~ i know i have a long way to go, with miles of improvements to be made >< don't want my head to get big LOL my own goal is to get better every time even if its not perfect

I'm not a huge eater XD and I don't like to crowd the plate too much (theres usually more than on the photo, i just take a picture of the plated portion)
