I think this is the best combination for gaming. I included the mugen 2 cpu cooler because it's a good idea to overclock the cpu with 2x 5850.

It'd be also helpfull to note your screen resolution btw

1st question yes with crossfire, only old games shouldn't run.

2nd question What kind of simulations? heavy parallelized/multi-threaded ones? you should ask if they have OpenCL or CUDA support.
