In general, I tend to be more of a defensive, expansive player so I don't harass or push early very much and try to get to 3-4 bases depending on the map, especially if it's something like Metalopolis or Lost Temple and then tech and bulk up to prepare for a big push.
The one thing that's already hard for me to deal with and probably accounts for literally half of my losses is when a turtled terran goes mass marines with a decent number of thors and sometimes tanks for support. If I can get to the 30 min mark without a big confrontation, I usually have taken over most of the map and gotten wide creep spread and can push with a 300/300, maxed out army to overpower him.
But most of the time he will push out when I am around 150 food, and have about 3 bases, but a unit count of about 60-70 drones, 5 queens, and mostly just zerglings and maybe a few mutas or something for the rest of the army. I can try base racing but it's too easy to lose my mutas and just leaving half his army in base prevents me from going in with them. Most of the time I just get overrun in the first encounter and lose my entire army and try to scrape by with reinforcing mutas and lings that arrive as they hatch and get destroyed because they don't come together at the same time. Even if I take out his entire worker line and prevent further production, what he's got is enough to rampage the entire map and take me out.
I've tried mixing in infestors but fungal growth and neural parasite usually doesn't do enough to help and they get sniped out too easily. I tried roach/hydra once but that got smacked down.
Straight off the bat, I don't have any good replays handy so this is more of a general question about what I should be looking for and aiming towards. Many times I have a thousand minerals or so in the bank so I know that I can be producing better but I don't know what to be making. Am I supposed to be teching up to greater spire stuff or just more lower tier units? Or am I approaching this all wrong and I can't ever win against that kind of maxed army and have to just prevent it from coming together?

If you're at 150 food, you should already have harassed with your mutas. I know if you hit his base and he's got turrets everywhere, it's hard. Seriously though, try to harass with your mutas earlier and then engage him on the ground simultaneously. Harass, but don't commit until you have a good position (open ground). Make sure your mutas don't die and have some ROACHES. The reason you're losing this match is because of your unit composition. Roach/baneling/ling is already enough to deal with a group like that. Throw in some hydras (at 150 food that should be easy) and you're set.
Scout his build (You can see he has a lot of marines with changeling or sac an ovvie) and prepare. It sounds like you have a lot of builds you follow and macro very hard. As a zerg you have to determine when it's a good time to make a lot more units and that's when it seems he's mounting an assault. Muta/ling is some BW build and it just doesn't work against marines with thor support. Mass roach soaks the damage from marines and thors as it is, but if you can't use roach/hydra, throw in some banelings. Banelings blow up marines.
Don't let him get maxed out, force him to attack you. Harass. Scout. Try overlord dropping, nydus worming, things that stop a person from turtling. If he has to deal with a nydus worm he often has to move his army there. That's when you attack. If you drop, you can just plop your army on him right away. It's very effective.

How can roach / hydra lost to marine / thor? what league you in?
Some strats I use:
- 8 or so mutis to pick off his tanks from behind...even if thors drop them. - fungal growth more then once and retreat...let marine life / medivac healing diminish b4 big clash. - if its a big clash...try attack from more then one side...at the sime time....choke pts suff up the zerg....remember...every push by yr opponent...creates a flanking opportunity for you...and zerg are the kings of flanking...so ''draw'' him in. - also try balance your main army with his...if he goes more maruaders, go more hydras and less roaches.
In a big ''army'' clash....tanks are the only real threat imo...they throw the odds in the T favour big time...you need to sacrifice a force just to take them out.
Most of the time a strong simple push with roaches / hydras from the front and muits hitting tanks at the back should work.

you must harass. minerals aren't the only thing to hit. hit depots, hit straggling scvs or sieged tanks when he pushes out. PureHorong is right that if its turreted up its hard, but so many times people will fly over the common areas with mutas, and as soon as they see any sign of turrets they back off. turrets can't be everywhere, and if they are, terran wasted a ton of money in static defense.
try to get some vision. bring an overseer with you and contaminate crucial structures. or drop a changeling for some scouting (factories, and reactor barracks are the obvious contaminate targets, sometimes starports)
it seems to me z players are relying way too much on their macro ability and not so much on the strategy part of real time strategy.
