hey hey, it's time to get a new pc, and the last time i looked into that was in '05. Fortunately for me and apparently many others this thread exists and continues to be an amazing diplay of comradery and know-how.
What is your budget? 800-1000€
What is your resolution? I intend to purchase a ~19" monitor later on
What are you using it for? gaming and streaming, it's also crucial that the pc is quiet!
What is your upgrade cycle? At least 3 years
When do you plan on building it? ASAP
Do you plan on overclocking? not sure yet
Do you need an Operating System? I want W7 professional to be able to change the OS language
Do you plan to add a second GPU for SLI or Crossfire? no

For a low budget board, you may want to look at the Gigabyte P67 UD3 or Asrock P67 Pro3 as both of these are slightly better budget boards than the ASUS P8P67 LE
You'll probably want a Caviar Green for storing documents, media, etc as 60gb on the SSD isn't a lot to work with.
You may want to look into a Radeon HD6850 as these perform very similar to a GTX 460 and generally can be found for less. The 6850s can also be flashed into 6870s.
The rest looks good, don't forget a DVD Drive.

I think that's a Vertex 2. There's no Vertex 3 (big difference) available yet. Also, you want either 2 or 4 sticks of RAM for a dual channel setup. What you might be missing is secondary hard drives? I don't see anything else missing that you did not mention. By the way, stock cooling on the 800D is not that good. Normally many people worry too much about cooling, but with SLI GTX 580, you should probably give it some more thought.
You see temperatures are significantly worse compared to even a HAF 922 (~$100): http://www.overclock3d.net/reviews/cases_cooling/corsair_obsidian_800d/6
That means that in practice, the CPU/GPU fans have to work harder too, which can make the whole thing noisier as well.

You don't *need* a SSD. It's just very high on a list of "nice to have" features. Increases load speed of everything, especially windows.

Hey guys so I went to my local retailer and put through my order today, and the guy that works there said I should have roughly 2 inches all around my case so that it gives the case extra breathing room... I'm just looking for confirmation on this because the case is almost 9 inches wide, so by his logic I would need 13 inches width where I want to put my tower (height isn't really a problem)... seems a little big and excessive to me.

It isn't a terrible idea if it can be managed. It's not super mandatory unless heat is an issue.

You don't need to leave the motherboard side any breathing room. An inch or two on the other side would help but it isn't necessary.

This part is not going to be very helpful because I live in Iceland and the tax on computer parts is almost 50% of the price and current swings one day I could be paying 100$ the other 150$ so It is very different from the USA. but FYI I am going for 100.000 Icelandic kronas which is about 850$
