Erhm... the store I ordered from can't make up their mind whether they're about to send me 4x4GB RAM or 2x8GB RAM (no, I'm not kidding).
Is there any disadvantage performance wise (besides having a hard time upgrading) to running 4 modules instead of 2 that I should be aware of? Just in case it actually turns out to be 4 modules..

There shouldn't be any issue performance wise or at least none that you could notice. Only thing to watch is if they have tall heatsinks and you have a big cpu cooler you might struggle to get one of them in.

Four modules is harder on the memory controller (might not be able to clock as high at the high end, maybe a hindrance for 2400mhz but you can probs still run it fine) and take up all 4 DIMM slots, so two is preferable for 8gb

Yes, there's something off with that product. If you click on that link that shows all sellers for it, there's a shitload of sellers all selling it at prices like $65 and that just can't be real.

The prices just came down like 40€. Now it's a tough decision between the sapphire 7870 and VTX3D Radeon HD 7870 Black Edition (the worst named card ever, because it's nothing like 7870) which costs about 30€ more. I'm unsure of the performance difference between those cards, can't tell which one to get.

The latter 7870 is more commonly referred to as a 7870 Tahiti LE or XT, which is a cutdown 7950 and would perform similar to a 7950.
Most tech companies don't have a logical naming scheme.

Edit: It's available on pixmania.co.uk, but it's £145 instead of 149euros so more than 10% more expensive

Promised I'll update when I build the pc, it's working great, thank you for your input Only issue I have so far is sometimes when I plug my external drives in they do not appear in the system, but usually unplugging it and plugging it back in helps. Also had a small issue with the front panel of the case coming off, not sure if it was manufacturing or I broke something (in case someone is looking into the same case). I just put stickers over it as a fix.

I assume you're plugging them into your USB3 ports, do you get this problem with the USB2 ports as well?

On that note, I tinkered with the cooling on my GTX 560 TI and now it stays below 60c when running things like Heaven, so I guess I could overclock some (or a lot), but I'm seriously scared about the VRM getting too hot. There's heatsinks glued everywhere, but the back side of the card gets seriously hot around the area where the mosfets are on the front. I think I'd burn myself in a split second, so I'm guessing it's a lot hotter than just 70c and that's just the back side of the card.
I can't really find discussions on what to do now. I've seen people write that if I stay within the bounds allowed by the stock BIOS with the voltage, I should be safe. I'm pretty convinced I improved on the card's stock cooling situation for the VRM, but there's no VRM sensor readings provided in software like GPU-Z for this card (does any NVidia card have readings for VRM temperatures?).
If there's no temperature readings for the VRM, does this mean there's no protection and the VRM will simply die if getting too hot?
+ Show Spoiler +Btw... the surface of the Arctic cooler I had on my graphics card was sooo terrible. It seemed to not make any contact in the middle of the chip. While it still seemed to cool alright, temperatures dropped 20c after some pretty crappily executed lapping. I already had that thing for a while and only noticed how bad the contact was because I wanted to replace the thermal paste.
