Off the top of my head, I can only really think of Oddish, Bellsprout, Bulbasaur and I would say Paras but I don't think it's actually a grass type. But for water pokemon you have a whole slew of pokemon to choose from, so in that case I think Squirtle could be a little limiting.
And then for the real plot twist, I think Charmander is my favorite generation 1 starter.

Grass is a pretty poor type overall though, imo. When it comes to offensive power, it's good against Water, Rock, and Ground, and you likely already have a Water type, so grab an Electric type instead and also be covered against Flying. It's weak to Flying, Fire, and Ice, three pretty common offensive attacks.
