I use them the other way around: Fresh eggs has to be quite fresh (the less you plan to cook them, the fresher, eg scramble eggs requires fresher eggs than a cake), I would say after a couple weeks, you may prefer cakes :p And when I don't plan to do much cooking, I would just make the older eggs hard-boiled to keep them a bit longer. In any way, don't wash them, that's the best way to rot them in a few days (even in a fridge). | ||

But I've mainly been in contact with western-world unis, so can't really say how they rank compared to rest of the world (middle east, chine, etc).That said, they all try to advertise themselves as the best place imaginable (of course), to attract skilled staff/students. It is supposed to imply not that the egg has hatched, but something "starts to walk away on it's own" when it is so rotten that the mold itself has grown and evolved to such proportions that it has the capability of moving on its own. | ||
