For the disguise its like this.. all of the knights or most of them had like a special quality strong knight at arms or strong in x category, y categoy and so on. Lancelot was good at everything, (well he flopped piety obviously) since he has all these qualities being able to change forms was probably something he could do as a spirit, because well hes Lanceleot and hes badass and he could do everything the best knights who were good at what they did could.
Its just an idea, I agree it was probably just a convenience thing.
