Serious post apocalyptic, hmmm. The first thing that came to my mind was Ergo Proxy but since you've already seen that, best thing that I have that fits that criteria are Chrome Shelled Regios and Nausicaa of the Valley of the Wind. Another that comes close would be Kaiba. Those are all that I can come up with.
Except wait maybe you can add School Days there too.

Nichijou was great too, best scene for me was when Yukko was hunting the mosquitos. I think everybody knows how annoying these can be
What I like about Nichijou is that even though it's a slice of life with no indication of a plot, all the characters are changing and growing, with the exception of a few that are designed to just stay the same and be annoying.
I feel like that's a large shift for Kyo~ani from works like Lucky Star, where the characters didn't really change, and even K-ON!, where characters might learn something one episode and just completely forget it the next.

How far can we attribute this to the original series tho? I'm more impressed by the fact that Kyoani can take some relatively mundane series (LS, K-on are pretty boring manga imo) and add value to them (we also see this a lot in Haruhi). This is what makes a good studio and a good anime adaptation.

That's true.
But my first few glances at the Nichijou manga seemed nothing like the scenes in the anime. As in they were the same scenes, but Kyo-ani just added a bunch of new spins on them.
Definitely were parts that I didn't expect. Kou and Ohana almost meeting near the railroad tracks reminded me of 5 Centimeters per Second. Then of course, there's the cute lady at the end who seems to be Ko's manager.
And whoa. Just noticed that the mystery guest was that woman with her mom.
nice episode but I have to say Ko just sucks. I mean he is standing at the mountain leading up to the inn but he still goes back. Such a wimp he at least could have said hello and surprised her

Ugh Ko ruined the episode for me. Not only is he so pathetic that he went pretty much all the way to the inn and then just went home, but also he somehow managed to occupy Ohana's mind the entire episode. She said his name to everyone at every chance she got.
is there any decent anime that is horny/ecchi but also fulfilling? like, about a guy or girl who actually fucks rather than just teases or gets teased by people? every anime is about a guy who doesnt wanna fuck the cute girl, or wants to but cant, etc. only one i remember offhand with actual fulfillment is moonlight mile
edit: or some anime where someone fancies someone and eventually they do actually fuck
