Edit: That and Itachi has 2(probably more) techniques coming from susanoo while Sasuke never showed us any while he had his original sharingan, proving Itachi is still one of the superior characters even in death.

One thing started bothering me, why couldn't kabuto just undo the jutsu on itachi and take his life away? Then pain would've just facerolled them all.

That's the part I don't get. Itachi put Kabuto under a genjutsu so he can't control itachi anymore. Now Itachi dies when the whole Revival jutsu is over or kabuto dies and walks on his own in the meantime?
