I only read Baccano vol 1 when it was supposed to just end there, so I've kinda held off on reading the rest of the volumes. It can only go downhill

When I've made personal recommendations based on pple's taste they've almost always enjoyed what I suggested to them, so hopefully you'll be satisfied with these.
Samurai Champloo is the best anime I have ever seen. It wasn't easy to admit, but it's the only anime that i cared to watch for the 3rd time and probably it wasn't the last one. I loved everything.
Kara no Kyoukai, just because I need to be a fanboy.
That said, the things you have watched cover...quite the distance, rather difficult to make a coherent suggestion based on that, might as well as start recommending personal favorites.
Sola, eh? I've recommended it to a few, but it is a bit hit and miss with most. The fact that it wasn't longer doesn't really help, so much wasted potential. That said, Rakkyo and Tsukihime go together well, so my suggestion was valid somehow!
Bantering aside, another possibility would be Suzumiya Haruhi no Yuutsu, considering the OP can stand Baccano's narration, Suzumiya should be fine.

As for my suggestions:
Monster (74 episodes) This one's a mystery/suspense type. It's a bit long, and the pace is a bit on the slow side, but it's got an engaging story and some interesting, deep characters.
Black Lagoon (24 episodes) Decent action and blood. If you liked the sadistic side of Alucard, this one may be worth checking out.
Fullmetal Alchemist (51 episodes) Action/adventure. This is a solid show that's pretty good all around.
i have to say, in all honesty i find hellsing incredibly over rated.the series was just boring as all hell to me. The best part about it was that the main characters name was Dracura!
watch school days and, if possible, play the visual novel it will piss you off and make you want to scream at the characters and disturb you, all the while enthralling you
When was it fine to make eroge suggestions? Let's tell the OP to play all of Key and Type-Moon's works at that and read Kara no Kyoukai in novel form? :p

It may seem lame at 1st sight but if so - just more episodes need to be watched Samurai Champloo has very good story imo; definitely worth watching.
Other 2 VERY VERY GOOD series that should match animes in OP are:
Great Teacher Onizuka and Ghost In The Shell (I think mentioned earlier?) + Show Spoiler +
at least 1st season because there is too much bullshit in 2nd that is supposed to be cool and deep but is just stupid (like whole 2nd episode of 2nd season ARGHH)... but has funny moments too (example: how Tachikomas save immigrants' ghetto in the end of the 2nd).
Interesting thing about GITS is I found English dubbing of the 1st season to be better than original Japanese of the 2nd (and in 90% cases I hate any other dubbing in any anime than Japanese). I don't know when English dubbing of the 1st was done but I don't expect Japanese one be better than in 2nd season that was made 4-6? years after the 1st. It's not bad itself... it just surprisingly seems to be weaker oO
edit: GITS movies are whole another story tho - if you will watch 1st season than 1st movie has much darker atmosphere and I don't recall ending be too much happy;P... 2nd movie was... too weird and too retro in style for me; 3rd one was better than 2nd in all aspects, maybe not a masterpiece but not bad In general 1st series is the best among all...

I think I would define them as slice of life... Sort of. I liked them. I don't know if you want something completely boring with no fantastic elements though... If that's the case, they aren't for you.

watched midor no hibi yesterday and haruhi last Wednesday XD both very good. Haruhi is actually in my top 3.

The first season of the sequal was good cus the main char didnt end up wiht his sister, the second season of the sequal he started having romantic dreams about his sisters... tahts where i droped it . geee right when it was getting watchable again)

Plus, a lot of Japanese anime/manga have some sort of incest or another, so it's best to ignore it or accept it. At least they're usually not dead-on incest like with brother/sister, but more towards cousin/second cousin which I think is actually legal for marriage in Japan atm (correct me if I'm wrong.)

i didnt know about the marriage thing. I knew they wernt blood siblings but, it just felt weird calling him oni chan then there makeing out (shivers) I guess if some one dosent have an actual brother or sister it might seem 'sexy' but l, having a sister myself think its fucking disgusting. for some reason i have no problem with the cousin shiz

To be honest, the incestuous tone isn't even that prominent; it's not a hentai that screams OMG THEYRE SISTERS AND THEYRE MAKING OUT FAPFAPFAP. It's more of an aspect of the anime that if you can appreciate, you can really bring out the best in Candy Boy. If not, it shouldn't detract from it. The comedy is still there, you can see the love as familial (which it is), rather than romantic. Maybe I'm overthinking it. I watched it and loved it, and to me, that's all that matters.

i happen to love yuri XD. Im sure to check this out, and whats eva? if its in the same category as haruhi it must be kickass. Haha twincest is hot 2 (arnt i a hypocrit)
eva is neon genesis evangelion it's actually very different from haruhi, but it definitely is kickass. it's much more of an indepth storyline that starts out focusing on mecha and the characters themselves, and eventually shifts into focusing less on the mecha, more on the characters, more on mindfucking, more on resolving/developing the plot. haruhi is more 'watch, laugh, enjoy the awesomeness' while eva is more 'watch, be drawn into the characters and the plot, be confused, rewatch, analyze, read/discuss on forums, understand a bit more...' Two different kinds of pleasure; I thoroughly enjoyed both.
