If you don't want to let the probe see your gas situation or whatnot, then prevent scouting, but if you are just more comfortable "knowing" that probe is dead, then do so, but remember just because you kill that probe all you actually know for a fact is that the probe is dead. There could be 1,2,3, or many more still walking around the map, planting pylons, scouting, whatever.
In a strategy game, information is so very important and it is always big to know facts, then things you can derive as truths, but to also be aware of possibilities. People tend to not put enough credence into the fact that SC is a game of information.

This is really, really hard to do. Because to stutter you have to issue a move command immediately after the first shot. Hard to read the movement before you need to issue a command.
