Given the word proxy already makes perfect sense in the context of its Starcraft use I see no reason to think it is short for anything.

In Type 1 Magic Tournaments for example people are allowed to use "proxy" cards, and I don't think that's short for proximity. Probably the same situation here.

I always thought proxy wasnt short for anything the actual word fits in to context too perfectly for it to be wrong.

It's for sure short for proximity.
If you use the word in the actual meaning of the term, what's considered proxy gates isn't attacking by proxy. Attacking someone by proxy would be, say, when you're bsing a 7v1 comp stomp and you get other comp stompers to kill each other. Thus you're getting comp stompers to kill each other on your behalf (by proxy).
