Naniwa's style relies on timing attacks, and Stephano is way ridiculously good at reading Protoss timing attacks and stopping them. It would be a one sided victory for Stephano!

This is true, stephano does know how to read protoss really really well. But we've seen what naniwa can do with his battle micro, beating back armies of way higher supply. So if you factor that in i'd say it's closer to being even. But that's my opinion.

From the OP (I'm neutral as I don't like either player) it looks like this - Stephano calls Naniwa out - Naniwa wants to bet 500 for a showmatch. From my viewpoint, Stephano is scared and bluffs by upping it to 5000 and Naniwa calls him on it (we have the evidence that Naniwa is going to accept a 5000 bet for the whole world to see). Stephano should now walk the talk by accepting it.
