I find that my squat is not as deep with the hex bar and (possibly?) as a result I can lift a fair bit more weight with that bar rather than the straight bar. Im not sure exactly whats at work here, because its noticable difference in weight (3x5x270) for the hex bar and closer to 3x5x230 for the straight bar.

I can't really picture how you squat with that, no way you can put it on your shoulders... so I guess ROM would be limited by the plates limiting bar descent so it's going to be some half squat, that will have a grip component like a deadlift? In fact, I can't really picture this as anything but a deadlift type movement, it's fundamentally a pull from the floor. I would think grip would be the limiting factor, I can't imagine your grip being able to hold onto more than your legs can push up.

people deadlift more than they squat usually . . . grip is not an issue if you train it. i think of regular trap-bar lifts as more like a deadlift

Standing on some plates to get a deeper "squat" isnt a bad idea

It's also possible the different setup and musculature involved allows for more weight for you, as could the weight being directly to your side rather than in front. Never used trap bar though, so I can't say 100%

For some people protein diets really help for losing weight and especially when you combine it with exercises.

We just had Hy Vee open in MN, which has been my grocer of choice since. There is an Aldi in Saint Paul, but it is not well stocked.
