What cpu do you guys have and does it allow you to comfortably stream how you'd like? (debating between i5 7600 and i7 7700. Price points aren't negligible and I want to know if the i7 will practically make a difference for my purposes.)

As much as I am all for telling everyone to go Intel, you should give consideration to the ryzen. They are roughly equivalent in terms of power and the AMD ones cost ~half the price. Other than that, if you want to stream you more than likely will need something with i7 strength and probably at minimum a 6700 (that's what i have at the moment and it works just fine tbh. GPU 1070's are p good for the price, you can get away with 1060's.

Could wait for the ryzen 5 to come out but without benchmarks and the multi threaded processor generally being worse for gaming I'm OK switching to Intel this time

You certainly don't need an i7. The price gap is so huge that unless you're doing something insanely cpu intensive repeatedly (streaming wouldn't be) then i5 for sure. Ryzen means you need a ryzen compatible mobo too and it just seems like a hassle :p.
