It's niche in the same sense Touhou is niche - still incredibly popular, just judging by how many bands there are. I think anyone with more than a barebones exposure to anime/otaku/Touhou culture has some awareness of it. If you have no idea of anything related to that at all then sure you might not know it, but if you do it's quite popular.

It's not necessarily Touhou bands, but as people said the melodies are simple, so you can do a lot around them (I could link you 6 differents arranges of Nuclear Fusion in 8 different genres, with all very different styles, without even searching), and after 15 years of Touhou you have around 200 themes by now, just pick your poison. One of the only links I put Soniv actually liked was of an amateur jazz band doing touhou covers "live" (as in filmed in the studio).

I have a bit of knowledge of anime but I don't really get involved with the culture of it or anything. I knew touhou existed and I knew there was music for it but I assumed it was game music and not music people had made themselves. I guess it makes sense if the melodies are good. I mean I can probably name 6 songs based around the led zeppelin Kashmir riff and quite a few based around a piece of classical music.

But you got the gist of it: everyone asks "which anime is it from?" when seeing fan art and/or hearing themes.
