In India onions are expensive and considered a delicacy. At high class restaurants instead of getting bread while you decide on your order like you do here, they give you a little bowl full of red onions. ![[image loading]](http://www.indiabizsource.com/sites/default/files/products/image/684577/34.jpg) When I first moved there I would eat like one just to be polite, but by the time I had been there half a year I would scarf the whole bowl down and then give the waiter doe eyes till I got more. Well, when you cook or saute onions, it releases a lot of sugar in a process called the Maillard Reaction. Onion rings = sugar and bread = AMERICA | ||
