By the way the other day I was off-racing as Protoss on Frozen Temple. The other guy was a Terran. He started with balance whining about Zerg being super OP vs Terran, followed it up with going 3-rax reaper (against Protoss, mind you), he turned his 3rd base into a planetary, and when I completely rekt him, he complained about Protoss as well. The things you can see in diamond.

my favorite game was when someone decided to do a hellbat allin vs me, saw me make roaches off 4:30 RW and just suicided his hellions on drones

10min later he complained how much of an overpowered easy race Zerg is when i amoved ultra/ling over widow mines bio

I feel like openings are a huge coinflip in LotV, partially because of how overcharge works. There are builds you simply cannot defend with certain other builds. In HotS PvP, you essentially had two builds (SG into blink, blink/robo) that at least defended everything if you played them properly, which means you could at least play straight up games if you wanted to. You could fall behind economically, but good scouting wouldn't let that happen. There was real meaning to each aspect of the matchup (upgrades, tech, economy, standing army), as well as two different playstyles (charge/archon/immortal and colossus styles) to choose from. Every tech could be used in a one base opener, as well as after expand.

In LotV that's not the case. Upgrades for starters are nowhere near as big as they used to be (some people don't even get a forge until really late in the game, whereas you immediately started a forge in HotS when you felt safe). Overcharge is really silly in a lot of scenarios and I feel like there's much less brains to it than there used to be. You just throw it out whenever you want now, in HotS you had to be super careful about when and how to use it. Disruptors (even though we don't see them as much anymore) are terrible to play in PvP and ramming charge/archon armies into each other for days isn't fun either. You wouldn't have that in HotS, you'd have someone teching to colossi and charge/archon played as a mobile army to threaten and take fights in the open until you were ready to get your own lategame tech. There was a lot more positional skill required in HotS (adepts are really really dumb in that aspect), as well as a lot more timings opening up through tech/upgrades/economy. With new overcharge, timings really aren't a thing against a defensively set up player. You have to wait until they take a fight in the open.

That's just some incoherent rambling, and I'm sure I forgot some aspects, but it covers a bit.
