No the best protoss in PvT would be Parting, but that's not because of his defence but his overall PvT game sense, knowing when to attack, defend, cheese, all-in, etc.
The protoss with best defence in PvT would be probably Rain.

The only reason why Terran can even play vs Protoss is the ability to drop, it's an assymetrical advantage, but not one which is imba however fucking frustrating it is to deal with goddamn drops

Rain just macro's up and let's Bbyong go to his crazy stage and then Bbyong got a better feel of the game. Also, Rain was sleepy
