We should be focusing on eliminating this imbalance instead of trying to find ways of making race picking a legitimate strategy. This is really what people are upset about. Protoss may or may not actually be better than zerg. But the fact that Scarlett picked it against DRG shows that she at least believes it to be so and she is not the only pro player to believe protoss is overpowered.
People are unnecessarily easily upset. Scarlett chose Protoss against DRG because she felt that playing PvZ was easier than playing ZvZ especially as a one of where she benefitted from her opponent being unprepared. MorroW once avoided the same matchup by race-picking terran because he felt his TvZ was better than his ZvZ. You'll also notice that she didn't play Protoss in all her other games against Zerg. So with all these things weighted in saying that Scarlett believes that protoss is overpowered based on the evidence of that one game is quite a stretch.
As for race picking, I don't believe it'll ever become as prevalent in SCII as WC3, but tournaments can easily organize systems to prevent the rock-paper-scissors nature of the race switching. For example, they could say that players have to play with their declared race for the first game, and for the next games the winner picks their race first followed by the loser.

How were the games, TL? Reddit tells me that Trap played very well and deserved the win.
Polt and Trap played well. Trap's style hard countered Polt similar to how Classic hard countered Maru in ro4, so the results aren't really indicative of the level of play from both sides.
Polt vs. Violet was a great series, too. I don't think it was as one-sided for Polt as people were saying.
I didn't catch most of Bomber/Scarlett's games so I can't comment on those. Bomber vs. Hyun might have been good but it was ruined by the (semi-understandably) shitty late night casting.

No race was considered favoured over night elf, but undead vs. nightelf was considered quite balanced.

I have recently practiced with moon for his match vs cechi before he retired, and UD was his worst matchup according to him. Also, Elf was heavily favored vs undead.
While I agree we should focus on eliminating the imbalance, blizzard has proven in warcraft3 that they are aware of what is imbalanced and refuse to change it (blademaster most obvious example. 73/27 win rate in orc vs ud in pro matches.) If i can offrace protoss and beat any top 50 korean zerg that I would lose to in ZvZ why should I not be able to? If Protoss is balanced than all me doing by picking that race is giving them an advantage since I have not practiced with that race.

- every other major tourney has vods where you can skip to anywhere you want , EXCEPT MLG, they expect you to sit thru every game ?

Really dissapointing to see mlg having only bo3 in late matches.. It was really possible for scarlet to bounce back vs trap. Might have won whole tournament!
