Many players still mech on those maps, is Ganzi just more comfortable with bionic play (whether he feels it's stronger or on a personal level) or did he play it specifically because his opponent is Polt?

For a lot of the first game I felt Ganzi played very well, certainly he was controlling much of the positioning/harass etc for long periods of the game. He just didn't take necessary precautions for the big lategame moves that can happen.

High level TvT is some of the best stuff to watch in sc2, I just wish we saw more super-late game sky terran vs sky terran battles like the old days.

That was a great series. You can tell how good those two are with the constant 1/2/3 marine battles all over the map.
