This logic falls apart when you get into bigger and bigger numbers (4-6+ colossi) due to the far greater scaling of AoE damage compared to single target damage. That scaling is the reason the big colossi balls are so hard to deal with.

How was he winning? He was just saccing units, did you not see the army count? They were both even regardless of his early attacks.

Also the Terran DID NOT micro, the last fight he didn't even bother to micro his bioball AT ALL, he failed miserably with his Viking and let them all auto attack the Pheonix nor did he even make a single good decision the entire game, failed drops, no Ghosts, no real pressure other than trading units. What about Squirtle? Went for great unit composition and made great decisions, his failing point was micro but that was hardly terrible compared to how poorly the Terran were playing

Vikings are cost-effective vs. phoenixes..? They are about equal in battle and vikings are 25 gas cheaper.

Theres no reason not to make more vikings when the protosses whole army is mostly countered by them. And sure you have to worry about HTs, but properly controlled thors wreck phoenixes, so...
