Then trained him (also where she taught him how to move super faster) and when he appeared and fought Byakuya he had the bankai which is probably assumed that she taught him how to acquire it because she also acquired it since it suppose to be insanely hard and impossible to obtain. Also Kenpachi was suppose to be only captain to not achieve bankai too. So that mean that Yoruichi in "theory" should have a bankai but this is all speculation since like you said, she never uses it for some reason. Or she prefer to fight purely hand to hand i guess but trying to make logic out of this manga is becoming near impossible

Dont forget, she is a soul reaper. All soul reaper uses their Zanpaktou to send wandering spirit to Soul Society. I think Rukia stated this in the beginning and Hollow that are killed by Zanpaktou have their soul cleansed. Not sure if there are other means of sending soul to SS or cleansing hollow souls since I dont remember them ever saying anything but Ichigo did bop souls in the head with his pummel to send them to SS.
