yeah, i'm pretty sure for max hero performance you just need a 75%+ winrate (and >4 games)

The noobs are making mistakes and the other one isn't good enough to capitalize on it, while the pros just avoid the mistakes, resulting in overall similar gpm/xpm.

However, there are a lot of things not visible to you in any form that Valve could data mine from replays that in many cases are highly indicative of a good player. The best example that comes to me immediately is how often someone clicks on his opponents to view their items. This is such a bad example. You really only have to check items some few times. You check for boots if you plan an early gank. You check for dust/sentries/gem when you rely on invis. You check for bkb on heroes you want to focus in an upcoming teamfight. You check for dagger/shadowbladeforcestaff on heroes that can stun. For example I would never check a jakiros items if I don't have any invis heroes in my team. You can often tell most of what you need to know from the minimap and from just watching the enemy heroes attack/move. There are ways to tell if a player is good, but I know of no such way that can be expressed as a number.

Most stats are useless because they're role dependent. I think if you attach it to certain heroes it could be worthwhile. On average a better player will have a better cs by 10 minutes.

some players have better mechanical superiority in terms of last hitting than others and is an easily distinguishable factor (one of many). just general lane control.

My friend who was decent at the game taught me the general role info and the basics of supporting and then I was on my own. The first hero I really started practicing was Invoker, who seemed far more interesting than any of the other heroes. So in practicing him I became invested in dota, and then expanded my hero pool / overall game knowledge. Coming from bw and sc2, I find heroes like skeleton king and sven to be unenjoyably boring to play because you don't do anything on them but right click. My second main hero was furion (also not in limited). So personally if I'd have been forced to play the limited heroes I'd probably have decided the game was boring and not worth playing and stayed with sc2. When you know nothing about the game you're drawn to the heroes who look or seem interesting (or maybe the heroes who rape in the games you see), and your attraction to the hero leads to an attraction with the game itself. Limiting options doesn't let people explore everything dota has to offer-- and first impressions matter.

Arguably, offlaners like LoH are also pretty good but they're good at surviving and not always at beating the opposing dual, solo or tri in their lane.

You see if he has a tp which is important when prepping a dive. Can check if he has obs wards on him(Either unused or 1 stack) then if you keep checking you can get hints at where he has warded so you can either avoid the ward or remove it. I would never intentionally not check a heroes items. You should be checking their whole team constantly. Actually think checking for tps is one of the most important things you can do. Allows you to punish a mistake pretty easily that you wouldn't otherwise punish if you didn't check.

It also affects how a player estimates how much spells/damage that he should ditch out in different situations, Dendi checks the enemy inventory really quick very frequently (same to most 'veteran' pros) but you see players like Sing rarely do that (and he often wrongly estimated the damage etc), which is also why i fcking love yaphets/PIS, his estimation of dealing X amount of damage is so damn impressive.
