We do that and have loads of fun (I think), and sometimes we end up playing DotA or Civ3 or doing physics on the blackboards with the help of upperclassmen. All you have to do is make the time. Yeah, seriously though, physical SC practice is much more fun than just meeting online. Plus, you can multitask and do your hw w/ your teammates, like hazel said.
Also, if two schools are close enough, or have the finances to do the whole live match setup, they are more than welcome to. It's not illegal to see your opponents and fans face to face. But as of right now, you guys are the ones who will have to manage that (I know Princeton had a few events like that last year, although I'm not sure the other school came - just the bigscreen and the fans).
