I've read assorted mangas that piqued my interest for a while now,but I've never had a huge amount of time to read a bunch, only read a few. I have a lot of time on my hands right now though and started reading more than I've ever read before. Recommend me some.
Stuff I've read/am reading and liked:

The Full Metal Alchemist manga us great, even better than the anime (as the anime's plot kinda took a dive off a cliff somewhere near the end).
Berserk is great. As is Great Teacher Onizuka and Ranma 1/2.
Don't go near Bleach. Right now that manga is shoving it's filthy plotless penis into every single manga fan anus on the planet. Some of those anuses have gotten so used to it they don't even feel it anymore.
Btw, I feel like I've spread this wisdom before. A couple times. I'm getting the feeling this kind of thread has quite a few predecessors.

I used to read a lot of manga. The only ones I remember clearly now are: Monster, Death Note, and Hajime no Ippo. All worth reading.

I'm too scared to go near Bleach/Naruto/One Piece, since it seems that way too many idiots/10 year olds like them. Maybe I'm being narrowminded, but for now, I'll stay clear.
I'm conflicted on whether or not I want to go near Fullmetal Alchemist...
I also don't feel like watching a lot of anime, too time consuming, whereas with reading manga I can go at my own pace.

No really, One Piece is much MUUUUUUUUCHHHHHHHHH better than Naruto and/or Bleach combined.

I don't understand the Elfen Lied hype, I totally didn't like it, neither manga nor anime.
I'm pretty sure there will be many replies with big names like FMA, so maybe I will single out some less known ones: Eternal Sabbath Welcome to the NHK (maybe) Houshin Engi (it's veeeery long and confusing) Superior (not finished) Mirai Nikki
If you'd like to check out some manhwa, I recommend Id (not finished). There were perhaps more noteworthy titles, but meh Most new mangas nowadays are pretty average/bad though... imho.
On a side note, I totally hated the 10 or so chapters of Pandora Hearts 
+ Show Spoiler +I hate post-L-arc Death Note.

I'm reading the scanlation of the manga, which is apparently like 10 or so chapters behind the release. Does this mean I'm gonna hate the next 10 chapters? D:

Yay another Soul Eater fan ^^. Death note was good and Full Metal Alch, like people said. Ghost in the Shell was fun too. Bleach is all right I guess, but nothing to get overly excited about. I've been hearing lately that Claymore and Berserker are good too. edit: Akira maybe too?

Omg, Liar Game! Never heard someone mentioned that awesome one on these boards.
I'd definitely recommend Monster. Awesome story though I felt it lacked some of the 'brilliant moves' that's present in Death Note, Liar Game and sometimes even in Naruto.
Gonna check out those other mangas you mentioned, seeing as my top 2 favourites are on the list I hope the rest are good too

It really depends what you like. If you want something pretty relaxed (ie: doesn't involve taking over the world or anything) but absolutely addictive you should read Bakuman. It's from one of the guys who made death note, but don't expect the same type of atomsphere. This also happens to be the sort of manga that you enjoy more when you've read a gazillion mangas since it's literally about manga writers. I definitely recommend this manga. It's probably my favorite at the moment.
If you want something more battle/fight oriented, but not as childish as the standard trio (which I hate btw, except One Piece which is just acceptable to me) you should try Jojo's Bizzare Adventure. Don't be too scared by the number of chapters since it's cut up into 7 seasons (which should be read chronologically, but don't leave any cliffhangers at the end of each of them). It's an awesome and extremely well thought out manga. Though watch out for a detail: this is a manga that many people stop reading because they don't like the first volume. If you don't like it just go directly to the second volume and that's when everything gets into gear. Really, I've never seen a manga with such a drastic change of style between two volumes, and changing really worked out well for the authors since it's awesome afterwards.
Otherwise Dragon Quest is a rather oldschool battle manga that's actually based on the video game. It's much more simple than JoJo but I think it's awesome.
If you want a battle anime, the best one I know is definitely Code Geass. Length isn't that big a deal since it's only two 24-25ep seasons, but this is an extremely fast paced anime that has an absolutely fantastic script.
Seeing what you've read, I doubt you're really into this type of manga, but if you enjoy sports mangas (like Hajime no Ippo) you should read the also legendary "Captain Tsubasa" (who hasn't already heard of this while growing up? :p), and the lesser known and more recent Eyeshield21 which revolves around american football (but in a very unrealistic kind of way of course).
If you like deliquant mangas that revolve around high-school wars, you should try Rokudenashi Blues or Worst. They're great in that field. Or if you want a more comedy oriented high-school manga, try Great Teacher Onizuka (GTO, I'm not a huge fan, but lots of people worship this manga so whatever ).
If, like me, you don't like One Piece for minor reasons, then you could try out Fairy Tail. Despite all of the similarities, I enjoy one much more than the other.
From what I saw very quickly in this thread, I definitely agree with the people who recommended Monster and Elfen Lied. Those are two great manga too.

Slam Dunk - its great and not too long! Berserk - no words, my favourite. Claymore - if you liked Berserk it's pretty nice as well. One piece - a nice huge adventure in world full of pirates (kinda childish but its entertaining). I don't really recommend Bleach, it gets terrible after a while.
I plan reading Monster asap.

D.Gray-Man and Kekkaishi are win mangas, I liked most of the stuff from your list. Gave up on Pandora Hearts anime though ;9

Finally someone else likes Liar Game. That manga is so much better than what its popularity suggests. Someone elitists may say that the tricks are too far-fetched but I think the author does a great job of building suspense and introducing new material.

I've never actually read Detective Conan, but I've been watching the anime for like 8 years now...and I'm still not caught up to the latest episodes haha, I'm so slow xD

Eden: It's an Endless World: must-read for everyone, deep but very depressing. Translations aren't complete though 15 or 16 volumes have been translated.
+ Show Spoiler +Eden is set in the near future, following a pandemic which killed 15 percent of the world's population, crippled or disfigured many more, and upset the world's political balance greatly. Eden is to some extent based on Gnostic mythology, with some characters, such as Ennoia, being named after Gnostic entities, and other Gnostic influences being seen in the themes of the ongoing story.
Berserk: probably the epitome of action comics. Later volumes are a bit of a drag tho, though it's very good for the first 20 volumes so.
Great Teacher Onizuka: My personal favorite comedy manga, ex-biker gang leader decides he wants to become the greatest teacher ever.
Jiraishin/Ice Blade: good series if you're into detective fiction.
Planetes: I guess slice of life IN SPACE?! Good read, and probably should watch the anime too.
if you've read Monster, 20th Century Boys/21st Century Boys I feel is a superior comic, though both are great.
Shin Angyo Onshi/Blade of the Phantom Master: pretty good series based on Korean folktales. Reminds me of Berserk, though this gets to a slower start. Imo, gets better when it delves into backstory.

I'm surprise no one mentioned History's Strongest Disciple Kenichi. It's a definite read IMO. I recommend Medaka box and Onihime VS. It's categorized as ecchi but its not full-blown ecchi.
