Food Porn!: triple pepper chili

Hey TL! Happy Monday. :D

So as some of you may know, I was featured in the "Fan Creation of the Week" on the Diablo III blog for my various D3 related recipes (they even highlighted some of my StarCraft food as well!).

Well, when I doing the Q&A, I asked them if they had any special requests for recipes. The D3 team gave me a few requests, so here is one of them:

Diablo III Chili!

But, that's not all...
They even cooked the chili!

(well, by they, I mean Wyatt Cheng... He cooked the chili the night before and brought it to the office the following day for a lunch time chili feast)


INGREDIENTS
I will say that this chili isn't burn off your face spicy. It does have some spice, so if you're sensitive to spices, it will burn... But, if you have a high heat tolerance, the chili will probably just tickle you.

So, if you want to turn up the heat, I suggest putting ghost chilies instead of habaneros (since this chili was cooked in a huge batch, I didn't want to make the entire thing uber spicy because I probably wouldn't have been able to eat it all... plus, I couldn't even find ghost chilies T__T)

  • salt
  • pepper
  • 1 tablespoon of paprika
  • 1 tablespoon of oregano
  • 1 tablespoon cumin
  • 1/2 tablespoon of chocolate powder
  • 1 tablespoon of cayenne chili powder
  • 1 teaspoon of oil
  • 1/2 white onion, chopped
  • green onions, chopped
  • 3 habanero peppers, chopped and seeded
  • 3 jalapeño peppers, chopped and seeded
  • 4 anaheim peppers, chopped and seeded
  • 4 cloves of garlic, mined
  • 1 1/2 lbs of ground beef (90/10 lean ground beef)
  • 1 lb of ground pork (85/15)
  • 1 can of black beans, strained
  • 1 can of kidney beans, strained
  • 1 can of diced tomatoes
  • 1 can of whole tomatoes
  • cheddar cheese (optional)
  • sour cream (optional)



WARNING: DO NOT CHOP HABANERO PEPPERS WITH YOUR BARE HANDS!! Use gloves or chop in a food processor. The oils from the pepper (capsacin) will burn your hands!!


PROCEDURE
Total prep time is about 30 minutes. Total cook time is about 1 hour. This will make 8 servings.

Calories per serving: ~475 calories (without cheese and sour cream) / ~554 calories (with cheese and sour cream)

  1. Set a large pot on high heat. Add in half of your oil. When the pot becomes hot, saute your onions and garlic. Remove the garlic and onions when the onions become translucent.
  2. Add in your remaining oil and add your ground beef and pork. Season with half of your salt, pepper, cumin, cayenne, and paprika.

  3. Allow ground beef and pork to brown in the pot.
  4. Reduce heat to low and add in your diced and whole tomatoes. Return your garlic and onions to the pot. Add in remaining salt, pepper, cumin, cayenne, paprika, oregano and chocolate powder.

  5. Add in your chopped anaheim, habanero, and jalapeño peppers.
  6. Add in your strained kidney and black beans.
  7. Allow the chili to simmer for about an hour, stirring occasionally to prevent the bottom from burning.
  8. Garnish with green onions, sour cream and cheddar cheese.
  9. Eat!

is there any particular reason you chose to use tomatoes + juices instead of breaking up the whole tomatoes by hand and using some other liquids like broth or beer or soda for more flavor??

also choclate in chili rules nice choice. but this

I don't know which Habanero Peppers you use but I ground dozens of Habaneros in different foods with my bare hands and they are still 100% functional! ... The problem will be, that like 30min later you touch the corner of your eye with your finger ...

It's just a lot easier.

While adding beer or soda (personally, I don't like soda) adds flavor, it also adds some extra unnecessary calories.

When I bake, I actually use that exact chocolate. However, I didn't have that bar on hand, so I just went with the chocolate powder I had:

I'm pretty lenient because a lot of "good for you food" can be debatable depending on what nutrition philosophy you follow. Additionally, there's always new publications about food science and nutrition, so that can change which foods are considered good for you.

Basically, I want to eat wholesome food...The less process, the better. But, that doesn't mean I kick out all processed foods (cheese and sour cream are pretty damn tasty...).

Ultimately, there are some things that are straight up horrible for you:
