As one of my interests, I have put down "E-sports" right after Piano and Snowboarding. Do you think having that as an interest will in any way deter potential employers?
The field I'm looking at is PA/Online Marketing.

Most likely it will just go unnoticed imo.

Yeah, I got to agree with this. If you're not a content provider, don't mention it. If you are, strongly consider still not mentioning it unless it's closely related to the type of jobs you expect to be getting.

you don't win anything from doing it, but you could lose a lot

I mean, I put "urban simulation games" on my resume, was asked about it in the interview (I said I like SimCity because it allows me to plan out districts and optimize travel patterns or some bullshit like that), and here I am at the transportation engineering job. That's different from an untargeted resume like the OP is talking, though. Making a hobby of something similar to the job you want is fine, but if you don't know who's going to read it, it could hurt you.

Most people still have no idea to what eSports is. They might know about online gaming and would generally view it as a bad thing, but if you could turn it around and show a different side of it, it'll definitely differentiate you from the rest of the clones that are out there. Take heed though, you'll want to show that, yes you have something else that makes you stand out from the rest, but you'll want to also stand out just enough to be noticed - not so much that the interviewer feels that you won't fit into the company. Show that you can be an active contributor to something that you are passionate about (say, eSports) and talk about how you've always wanted to work as an online marketeer and that you believe that you will be passionate about the job. This allows your interest in eSports to be a plus point because you've shown (or have led your interviewer to believe) that your passion translates into active contribution. As much as your employer would want to know if you're qualified for the job, they'll also want to know if you're willing and happy to do the job that you're applying for - having some sort of extra marker (ie passion) will help them decide better.

For resumes, 1 page or 2 page? I've heard arguments about the pros and cons of each, I'm just curious what the general consensus is. I personally have both, a one page for jobs that I think don't require as much info, and a two page for "serious" job apps.

There are just too many things to list for a professional job to cram it all onto one.
