List of PS2 RPGs that people enjoyed - I'll leave a comment if I actually played it:
Dark Cloud - Level 5 Dark Chronicle - Level 5 Dragon Quest VIII - Level 5 (Really an enjoyable experience.. the art is quite different from most RPGs but somehow I made myself play this when I couldn't stomach Wind Waker - I enjoyed it) Rogue Galaxy - Level 5
Monster Hunter - Capcom
Shadow Hearts/Covenant - Sacnoth
Deus Ex - Ion Storm (One of the best games of all time, albeit I played on the PC)
Kingdom Hearts/KH2 - Square (Really fun - probably horribly dated and hard to play these days) FFX/FFX-2 - Square (FFX is actually a great game, but you have to stomach a constant nausea for the dialogue between the women main characters as the series goes along)
Suikoden III/IV/V - Konami (Quite good, Suikoden is a series you really need to play.. not certain which I would pick, though.)
Xenosaga/II - Monolith (Entertaining scenes - too many, too long.. eventually bored and quit)
Arc the Lad - Cattle Call
Disgaea - Nippon Ichi (Can't stand the art style and system in this game.. its a love/hate thing) La Pucelle - Nippon Ichi Phantom Brave - Nippon Ichi
Shin Megami Tensei (I-IV) - Atlus (I played the latest one and some of three, I imagine if I had played these when they came out I'd have enjoyed them a lot more. They're cute and different.. I'd recommend giving one of these a shot at least... get 4).
Star Ocean: Till the End of Time - Tri Ace (Fun games when cliched stories and endless characters, sometimes hard to dive into but always a strong series) Radiata Stories - Tri Ace

Most of the RPGs I enjoyed were on the PS1 and SNES to be honest. I didn't play too many that I loved on the PS2.

Wait just to clarify are most PS2 games backwards compatible on the PS3? The PS3 that I got for Christmas is currently still in the mail and should arrive in 2 days, so I was going to go out and purchase some games before it arrives. Thanks everyone for all the suggestions! The last real console I owned was an SNES and I loved Chrono Trigger and Final Fantasy 3. My computer doesn't have the specs to run modern RPGS really well like fallout3, so I'm anxious to try some new RPGs out on the PS3.

Assuming you didn't get the original 60 gig PS3 -- no, you cannot play any PS2 games on your PS3.

Only if it was the original PS3 phat, you probably got the slim model. Which backwards compatibility is phased out.
It's somewhat of a pity that Valkyria Chronicles and Demon Souls are the only viable recommendations for good, English, PS3-exclusive RPGs. They are definitely good though. I love how half this thread is about PS2 games (which you likely won't be able to play) or other older classics.
If you're interested in PS2 titles you might want to look into PS2 emulation, which is fairly mature right now. If your PC can run games like Fallout 3 or Dragon Age well, it can probably run many PS2 games.

I'm playing through Dragon Age right now and it's alright.However, I find it hard to give a shit about any of the characters let a lone my own (considering all I am is just a puppet who says the lines the game presents me with).
Waiting on FFXIII, hoping to be blown away. I recommend The Witcher if you have a good PC though.
How dont you like fallout 3? I don't think ive seen anyone that hasent liked fallout 3

Fuck yeah. It's the perfect cross genre game and you should definitely get this game, doesn't matter if you played Metal Gear, Metal Gear 2, Metal Gear Solid, Metal Gear Solid: Twin Snakes, or Metal Gear: Naked Snake.

It wasn't bad, but Oblivion was heaps better than it, and Morrowind was heaps better than Oblivion.
Valkyria Chronicles is an amazing new take on the SRPG genre. It's loads of fun.
Demon's Souls is sort of like Oblivion, but with a huge learning curve. You will likely die many many times before you finally get the game, but it's worth it in the end.
For the PS2, I recommend Okami, Persona 3 and Persona 4.

I despise Fallout 3 and know many others that do. It's a terrible game and the mutilation of a beloved franchise.
Fallout 1 & 2 forever. Bethesda can go to hell with their horrible cookie cutter, no personality RPGs. All they do is scatter a bunch of crappy items around, come up with a mediocre first person graphics engine and shovel bland, uninteresting settings onto a map. Then they hire some hobo off the street to write their crappy dialogues that only branch 2 ways.
