Socke and Nerchio I'd say.
Socke has performed well in many tournaments but he's still extremely underrated.
Nerchio keeps winning so many online tournaments but because he has not played in some big LANs he's unknown to many people.

Darkforce (at least before NASL). The dude is like what Haypro would be when he wouldn't be on Teamliquid... Damn good, but not many showings for some weird reason and therefore not/no hype at all.

Personally, I like Mouz's Morrow. He's a great macro Zerg player and really fun to watch. For those who don't know him, check out Day[9]'s steal this build series on Morrow's larvae management.
I like Destiny too, but I think he's completely over-rated. Mass spine crawlers and infestors isn't going to win an MLG. But like I said, I like him, hes a damn good player.

Destiny for sure, improved a ton lately. his harrasment zerg style is really different from a ton of other players.

Yeah, I'll agree with everyone saying Destiny, although if so many people are saying it, is he really underrated anymore? Regardless, he's very creative and if he ever takes the time to sit down and drill extremely deep into build and macro refinement I think he will be a top pro very quickly.
