Is there a proper apprenticeship for it? I have a buddy who was really good who largely left the game for an apprenticeship at a Korean Bakery.

Yep it's a proper apprenticeship . 3 years then you are done and officaly a full fledged baker. Then you can do your masters.

What can you expect to bring in after the fact? I mean bakers I assume are up early, but I was up at 3:40 AM local time anyway, but I never thought about what a proper baker earns.
