Your missing the point, I'm not saying every protoss does it, I'm saying they could and they should. Instead they chose gimmicky builds a lot of the time that have a much lower success rate than playing this lategame style where you turtle into an army advantage. Well other protosses tried defensive styles, and the Ro32 happened.
Most of the protoss imba whine that we see is because protoss can play intensely greedy and still get away with it without being broken. Rain plays as if protoss was underpowered. Insane safe, getting behind in eco, no risk, ever. And a lot of people (not you I guess) are still ready to blame his race on his win, because Innovation is the only one allowed to play better than mere humans.
