It's because at the start of the game you don't always have a clear idea about which player is going to win.

Much prefer watching PvTs. you must not watch bw or you must not enjoy positioning and stuff I think for a lot of people Marine-splits, exploding banelings, huge Storms look more exciting than careful positional play and mindgames
but TvT is still considered best matchup because of constant positioning, constant action everywhere......

Some of us just love dat strategic positional play. :E
But there's also the fact that in TvT you have such a wide variety of builds that you can do and be successful with. You can go mech, bio, bionic, you can be greedy, safe, aggressive. It's not like other matchups where you are pidgeon-holed into only doing several builds that operate off of the same logic anyway.

I guess it's starcraft 2 as a whole not being exciting anymore in its matchups.
